Today, we’re eating a triple chocolate cake **without any sugar or gluten!!! That’s right, this delicious chocolate cake is Keto-friendly and ready for you to take down during your diet.
I found this recipe online via https://www.gnom-gnom.com/paleo-keto-chocolate-cake/ and added a keto ganache to the layers and top using Lily’s https://lilyssweets.com/ mixed with organic heavy cream and 1/4 tsp of instant espresso.
**TIP: If you’re making your ganache in the microwave, make sure to add all ingredients to a heat proof bowl and zap for only 15 seconds at a time, stopping when the mixture is *almost completely melted. You will be able to melt the remaining chocolate by stirring at that stage. If your ganache starts to look grainy, that means it’s seized up, or “separated”. In this case, just add a bit more heavy cream and whisk vigorously until smooth.
