This sugar free red velvet cake is an impressive dessert. Especially when you make a mini tiered mug cake cake. But the most impressive part is that it can be made in less than 10 minutes!!!

The keto red velvet mug cake has all the made components of a traditional mug cake (like buttermilk and cocoa powder) but it’s low carb, gluten free and free from added sugars! In this video, I also show you how to make a keto cream cheese frosting. This frosting has a touch of melted white chocolate in it which adds more chocolaty richness to the red velvet cake.

A traditional red velvet cake is moist, red cake with a light chocolaty and tangy flavor. The two key ingredients in a red velvet cake that separate it from many other cakes are the buttermilk and cocoa powder. It’s a chocolate cake so that’s why the cocoa powder is there. The buttermilk is acidic so it helps produce a moist sponge to the cake and it gives the mild tangy flavor. The buttermilk also reacts with the anthocyanin in the cocoa to yield a red color. We do help develop this color further by adding a couple drops of red food coloring.

Buttermilk does contain naturally occurring sugars; however, we are only using 1 tablespoon in this recipe which would account for less than 1 gram of carb per cake. If you don’t want to use buttermilk, you can substitute with keto yogurt.

KETO RED VELVET MUG CAKE
(makes 1 cake – double the recipe for a tiered mug cake)

1 egg
2 tablespoons unsalted butter, melted
2 tablespoons almond flour
1.5 tablespoons monkfruit
1 tablespoon buttermilk
2 teaspoons coconut flour
½ teaspoon baking powder
½ teaspoon cocoa powder
pinch of salt
red food coloring

Mix together all the ingredients. Pour into a greased mug or ramekin. Microwave for 65-85 seconds until cake has risen and it set.

KETO WHITE CHOCOLATE CREAM CHEESE FROSTING
(makes more than just for one cake so adjust according)

2 ounces cream cheese
3 tablespoons unsalted butter, softened
1 teaspoon vanilla
1/4 cup keto White Chocolate Chips, melted
¼ cup powdered Swerve
