NOUR’S BANANA NUT BAKING MUFFIN

3 Eggs
1/2 Cup of Erythritol
1/4 Teaspoon of Vanilla Extract
1/4 Teaspoon of Banana Extract
2 Tablespoons of Melted Butter (for baking)
1 Tablespoon of Melted Butter (to coat pan with)
2 Cups of Almond Flour
1 Teaspoon of Baking Powder
1/4 Cup of White Chocolate Chips
1/2 Cup of Walnuts
1/3 Cup of Sour Cream

DIRECTIONS
– Preheat oven at 350 degrees.
– Coat 9-inch pan with 1 tablespoon of melted butter.
– Throw the rest of the ingredients into a large bowl, mix fully and pour in the pan.
– Bake for 28 minutes at 350 degrees. Add more minutes if needed.

NOUR’S FROSTING
1/2 Cup of Heavy Cream
10 Tablespoons of Erythritol
1/2 Teaspoon of Banana Extract

DIRECTIONS
– Throw ingredients into a large bowl.
– Mix till fluffy.
– Spread on cake that’s had time to cool

GIGI’S SPICY MUFFIN CAKE

2 Cups of Almond Flour
3 Eggs
1 Tablespoons of Flaxseed Meal + 3 Tablespoons of Almond Milk mixed together (egg substitute). Allow mixture to thicken for at least 5 minutes before using.
1/2 Cup of Monk Fruit Sweetener
2 Tablespoons of Almond Oil
1 Teaspoon of Baking Powder
1 Teaspoon of Vanilla Extract
1 1/2 Teaspoon of Banana Extract
1/2 Teaspoon of Ground Cinnamon
1/4 Teaspoon of Ground Nutmeg

DIRECTIONS
– Preheat oven to 325 degrees.
– Grease 9-inch pan with about 1 tablespoon of almond oil.
– Mix egg substitute, regular eggs, monk fruit sweetener, almond oil, vanilla extract, banana extract, ground nutmeg and ground cinnamon until combined.
– Add almond flour and baking powder and mix fully.
– Pour mixture into 9-inch pan.
– Cook for 25 minutes at 325 degrees. Add more minutes if needed.

GIGI’S FROSTING
8oz of Fat Free Cream Cheese
1/2 Teaspoon of Vanilla Extract
1/2 Teaspoon of Banana Extract
1/2 Cup of Powdered Monk Fruit

DIRECTIONS
– Soften fat free cream cheese in microwave for 10 seconds or until soft but not liquid.
– Add rest of ingredients and mix fully.
– Spread on cake that’s had time to cool.
