Low carb lunch meal prep for five days. This dish is low in carb, calories and is high in fat an flavor.

Baked Balsamic Salmon w/ Veggie Medley:
5 pieces of salmon
Pink Himalayan sea salt
Ground black pepper
Garlic powder
Dried parsley flakes
1 Tbsp Balsamic glaze (I found this in the specialty section in my local Aldi but you can probably find something similar in target or walmart)

Season, glaze and cover the fish and bake for 30-35 minutes @350 degrees

Veggie Medley:
1/4 softball sized onion
1/4 red pepper
1/4 yellow pepper
1/4 zucchini
1/2 can of french style green beans (you can use fresh they just need to be trimmed and blanched first)
1 tsp Bacon fat
Salt
Pepper
garlic
1/2 Tbsp balsamic glaze

Slice veggies into slices then cut in half as shown, warm the bacon fat in a saute pan and add onions and peppers to the pan. Allow these to sweat for a few minutes, season to taste then add the zucchini. If you add the zucchini at the beginning they will be mush long before the other veggies fully cook. Allow the zucchini to cook a bit then taste for seasoning. If needed add more salt and pepper. Add 1/2 tbsp of the balsamic glaze, 1 tbsp of water and cover. Simmer on low for an additional 5 minutes. If you like your veggies firmer you can omit this step. Gather your prep containers and divide the veggies evenly. Remove Salmon from the oven and allow to cool slightly. Put in containers and cool to room temperature before storing in the refrigerator for up to four days. I ate the first one on the day of prep.
