Chicken Piccata Ingredients:
2 boneless, skinless chicken breast (makes 4 cutlets)
1/2 cup – almond flour
1/4 cup – ground pork rinds
3 Tbs – grated Parmesan cheese
Salt and Pepper to taste (flour & chicken)
4 Tbs – extra virgin olive oil
4 Tbs – unsalted butter (divided)
1/2 cup – chicken stock
2 Tbs – lemon juice
