This is a vegan and keto lazy what I eat in a day 🙂 It’s lazy keto as I am not tracking macros, but everything will be high fat and low carb to keep my ketones up and also everything will be vegan. I mix this lazy vegan keto with intermittent fasting and I usually have an 18 hour fast, with a 6 hour eating window. this is currently working well in quarantine, although I do prefer to have a much smaller eating window usually.
In the morning on a vegan ketogenic diet, I don’t break my fast until lunchtime, so I have a black coffee and water to start the day. At lunch I make a tofu and cauliflower salad and show you how to get the fats up and keep in the carbs low. Richie and I have some vegan keto cakes at the moment too… this is such a treat and not something that we include in our keto diet regularly… But they are SO good, especially when you have been doing keto for a while and need a bit of cakey-ness in your life!

Our vegan keto dinner was some bird eye vegan burgers and some roasted veg 🙂 As you can see this is a very lazy way to do a vegan ketogenic diet, but it works for me. I would encourage anyone new to this way of eating to stick with macro counting until you feel confident about quantities and nutrients. Oh and don’t forget your electrolytes! Stay salty 🙂
