KETO THAI CURRY CHICKEN! Simple & Healthy Low Carb Dinner

20 oz of boneless, skinless chicken thigh
¼ of an onion
½ a head of garlic
1 stalk of broccoli
1 tsp Cinnamon
1 tsp Red pepper flakes
1 tsp Cayenne pepper
1 tbsp Garlic powder
1 tbsp Curry powder
½ tsp Ground ginger
1 tbsp Gram masala
1 tsp Turmeric powder
1 6 oz of tomato paste
1 13.5 oz can of coconut milk
1 bag cauliflower rice
Salt & pepper to taste
4 tbsp olive oil
Optional: ¼ cup of plain yogurt

Add 2 tbsp of olive oil to your pan. Dice your onions, chicken, and garlic, and chop your broccoli. Sautee the onions for 3 minutes, then add your chicken and all the seasonings. Once chicken is 75% cooked through, add the broccoli and garlic, and 1 tbsp of olive oil. Cook for 3 minutes. Then add the tomato paste and combine well. Add the coconut milk and stir until everything is combined.
Bring to a boil and then simmer for 7 minutes, stirring occasionally. Optional: add in ¼ cup of plain yogurt for extra creaminess.
Add 1 tbsp of olive oil to separate pan. Empty your cauliflower rice into pan. Stir until it is not frozen. Add salt and pepper to taste. Cover every 3 minutes and stir until rice is tender.
