Today I am going to be showing you how I Keto meal prep for the week. It is Mother’s Day Sunday and I’m going to take advantage that the grill will be going and cook up some extra Keto food to have for the week. Why dirty dishes twice when I can do everything once for company and just double it up.

I always cook bacon. My whole family loves bacon, especially my boys. I find it super convenient to meal prep the bacon. I cook all my bacon in the microwave and keep it in a plastic bag and take out the strips as needed and reheat. Saves time and a house smelling of bacon.

Mother’s Day menu is; carne asada, pico de gallo and also pork rinds if anyone wants to use it as a dip. Family is bringing salad, and guacamole. I made some cinnamon roll cupcakes for dessert and of course I doubled all of this up.
I also decided to add some ribs and pork chops that were on sale this week. All my main dishes are now done and all that’s left to put together will be side salads and maybe some coleslaw to go with the ribs.

Since the bacon is prepped, simply whip up an egg and you’ve got a super easy fast meal for the morning rush. Meal prepping doesn’t have to be difficult. Prep things that work for you. You might spend one day cooking, but you save so much time during the week.
