Egg Muffins:
8 Eggs
8oz of Pork Ground Sausage
1/4 Cup of Heavy Whipping Cream
3/4 Cup of Colby Jack Cheese
Chives, salt, and pepper to taste.

Preheat oven to 350F. Brown and drain sausage. Then mix all ingredients in a mixing bowl until well combined. Fill silicone liners 3/4 of the way full and bake for 15 minutes. Store in refrigerator for up to 7 days. Reheat in microwave for 20-30 seconds. Don’t over heat the eggs will get tough.

Tacos:
1 pound Ground Beef
1 roll Pork Chorizo

Brown ground beef on stove and then drain. Add the chorizo and simmer for 10 minutes.
