Keto Low Carb Cioppino Recipe – A Fine Kettle of Fish with Michael’s Home Cooking

I use scallops, shrimp and cod fish to make Julie’s wonderful recipe of Cioppino. This is outstanding and would make any seafood lover smile! To make this Keto friendly, you must use white wine instead of the vermouth or just leave the white wine/vermouth out completely.
Ingredients:
3 to 4 Tablespoons olive oil
1 teaspoon red chili flakes
3 anchovies
6 garlic cloves
1 bay leaf
2 ribs celery (1/2 cup)
1 chopped onion (1 cup)
1 cup vermouth or white wine
28 ounce can of crushed tomatoes
2 cups chicken broth
4 sprigs of fresh thyme (1/2 teaspoon dried thyme)
salt and pepper to taste
8 large scallops or about one pound of scallops
1 and 1/2 pounds white fish like cod
20 large shrimp or about one pound of prawns
1 large bunch of parsley chopped

This makes 8 servings. Each serving is 2 cups.
Each Serving using Pinot Grigio White Wine:
8 net carbs
(10 carbs – 2 grams fiber)
10 grams fat
48 grams protein
343 Calories
2 Glycemic Load
