Keto Low Carb Beef Rendang

Ingredients
2-3 tbsp coconut oil
300g beef strips or more
1 tbsp ginger
1 tsp garlic powder
1 tsp onion powder or flakes
1 tsp chilli powder or chilli flakes (or both)
1 tsp cinnamon
1 tsp cumin
1 tsp turmeric
1 tsp five spice or 2 star anise
1 tsp coriander leaves or coriander powder
1/2 tsp garam masala
1 tsp lemongrass
1-3 lime leaves
1 tbsp fish sauce
1/2 cup coconut cream
30g or 2 tbsp desiccated coconut
Salt pepper to taste

Simply stir fry the beef with coconut oil. Brown the beef and add the spices. Let it release the aroma. Then add coconut cream. Let it simmer. Add desiccated coconut then season with fish spice salt pepper to taste. Use xanthan gum to help thicken the sauce (if needed) or let it simmer for few minutes more. Remove from heat and serve with caulirice. garnish with coriander leaves or chilli flakes. 8g net carbs per serving makes 2
Caulirice is not counted on the net carbs.
