A light and fluffy lemon mug cake recipe that’s cooked using the microwave. Perfect when you just want to have some delicious tangy taste in your palates. Quick, easy, and definitely satisfying.
1 Tbsp olive oil
2 Tbsp coconut flour
1 Tbsp erythritol
¼ tsp of baking powder
2 Tbsp almond milk
2 Tbsp lemon juice
¼ tsp lemon rind, as toppings
1. Prepare all the ingredients.
2. Grease the mug with olive oil.
3. Add all the ingredients to the mug.
4. Mix until well combined.
5. Top it with lemon rind and microwave for 90 seconds.
6. Serve while still hot.
