Idli is a south Indian snack, which is fermented and gluten free. A healthy combination for a carb. This is very popular in India as a breakfast item as it is considered very healthy. Since the dal/lentil and rice are fermented, they are in a predigested form. To top it, it is steamed, so it considered very light for digestion and is recommended for patients in the hospitals.
Well, besides that I like for other reasons. Most Indians grow up eating it at least once a month and the light idli with the spicy tangy sambar maked for a killer combination. Idlis is very versatile I even eat it in place of breads with my curries, or with coconut chutney or even crisped up on the pan. Use your favorite seasonings to make interesting dishes. I have missed all my South Indian snacks like Idli, Dosa, Sambar and Rassam on Keto for a long time. But I have taken it upon myself to make Keto versions of all. 1/2 Cup Paneer
4 Tbsp Coconut Flour
1 1/2 tsp Baking Powder
1 Tbsp Psyllium Husk
2 Egg Whites
1 Tbsp Greek Yogurt or Hung Curd
1/4 tsp Rock Salt
1 Tbsp Water
1/2 tsp Ghee
