On a keto diet, it can sometimes feel like variety is out the window and you end up being stuck in a loop of familiar recipes and just going through the motions of cooking. Don’t worry, we have the perfect dish for you. I know that some people are put off by fish, but trust me when I say even the pickiest of eaters will enjoy this dish. Feel free to experiment with different types of fish (or even try a medley!), different cheeses, and even different vegetables in the pie and each time it will feel like a brand-new dish!

Ingredients:

450 g mushrooms

90 g butter

1 tsp salt

pepper, to taste

2 tbsp fresh parsley

475 ml heavy whipping cream

2 tbsp Dijon mustard

225 g (475 ml) shredded cheese

700 g white fish, for example cod

1 very large or 2 smaller cauliflower heads

3 tbsp melted butter

1/2 cup (125ml) soured cream or cream cheese

1 cup (125g) grated cheddar

1 tbsp chopped chives

grated nutmeg

salt to taste

Directions:

Preheat the oven to 350°F (175°C).

Separate the cauliflower into florets and steam or boil until soft. Make sure to drain well.

Add the softened butter, soured cream, cheddar, chives, some freshly grated nutmeg and salt and mash or whizz in a food processor until smooth

Cut the mushrooms into wedges. Fry in butter until the mushrooms have softened, about 5 minutes.Add salt, pepper, and parsley.Pour in the heavy cream and mustard and lower the heat. Let simmer for 5-10 minutes to reduce the sauce a bit.

Season the fish with salt and pepper and place in a greased baking dish. Sprinkle 3/4 of the cheese on and pour the creamed mushrooms on top. Top with the remaining cheese.

Spread the cauliflower mash on top and run a fork over the top to make lines.

Bake for 40 minutes or until the top is browned
