My friend cooked this recipe for me and I knew I had to share it with you! If you love Eggplant than this is the dish for you. This is such a creamy smooth dish that will delight your taste buds! My oh My…. Give it a try and don’t forget to make this dish your own! Pick your favorite spices and don’t be shy!
1 lb ground beef
1/4 tsp nutmeg
1/4 tsp cinnamon
1/4 tsp cumin
1/4 tsp all spice
salt and pepper to taste
Salt and Pepper
1/4 cup chopped red onion
2 Tbsp Pine Nuts
3 Tbsp Butter – Divided into 1/2 Tbsp increments
Roast Pine nuts over a low eat and set aside. Slowly simmer meat with onions and seasonings and set aside.
Sweat Eggplant for a minimum of 30 minutes. Whzen complete rinse or wipe salt from eggplant. Cut in half length wise. Roast Eggplants in oven for 30ish minutes in a 350 degree oven. (Note – poke some holes in eggplants and drizzle olive oil)
Once Eggplant is roasted, remove from oven and mash within the eggplant. Place about 1/4 cup of meat mixture into each eggplant half, place a 1/2 Tbsp of butter and return to oven for abut 5 minutes. When melted remove from oven , add pine nuts and serve or add mozzarella or parmesan cheese cook for a few minutes, then remove from oven and sprinkle with pine nuts and serve. Enjoy!
