THIS KETO CREAM CHEESE POUND CAKE IS VERY EASY TO MAKE.

INGREDIENTS
-1 1/4 cup almond flour
-1/2 cup full-fat cream cheese
-4 eggs
-4 TBSP xylitol sugar
-3-4 TBSP unsalted butter
-1 TSP baking powder
-1/4 TSP salt
-1 TSP vanilla extract
-1 TSP lemon juice or lemon extract

Method

Preheat oven to 180c

In a large bowl using an electric mixer blends the butter with the xylitol sugar until the mixture is light and fluffy and well incorporated.
Next, add the cream cheese and vanilla extract and mix well.
Add the eggs making sure to mix well.
Lastly, add the dry ingredients: the almond flour, baking powder, salt and mix well until batter is fully combined.
In a well-greased 8-inch cake pan or 8-inch loaf pan bake 20-30 minutes until golden brown on top. The cake will be done once an inserted toothpick comes out clean.
