Keto cream cheese icing can be really good or really gross depending on many factors. The butter and cream cheese has to be just right, you have to mix it at the right speed and the sweetness ratio has to be on point! Good news is, I have showed you EXACTLY how I make my favorite fluffy low carb cream cheese icing that goes perfectly on most of the keto cakes I make. -1/4 Cup Butter (softened but still slightly firm to touch)
– 1 250g (approx 8oz) Block of Cream Cheese
– 2 Tsps Vanilla Extract
– 1 Cup Powdered Monkfruit Sweetener (I use Lakanto)
