Ingredients for the marinade:

1.2 kgs of chicken thigh fillets cut into small pieces
4-5 cloves of garlic
4-5 green chillies (optional)
4-5 cm cube of ginger
40 gms greek yoghurt
juice of 1 big lemon
salt to taste
1 tsp cumin powder
1 tsp black pepper powder
1/2 tsp garam masala
1/2 tsp turmeric powder
2 tsp kashmiri red chilli powder (or 1 tsp cayenne pepper)
40 gms almond meal
1 large egg
40 ml olive oil
Extra oil of your choice for deep frying

Ingredients for sauteing:
40 ml olive oil
1 tsp mustard seeds
1 tsp cumin seeds
6-7 cloves of garlic – chopped
4-5 cm cube of ginger – chopped
4-5 green chillies (optional)
handful of curry leaves
salt to taste
2 tsp kashmiri red chilli powder
hot sauce (quantity that you can handle)
handful of green shallots

Method of marination:

Make a paste out of ginger garlic green chillies and yoghurt
Add the paste to your marination bowl and add juice of lime
Add all other spices and mix it well
Add almond meal and olive oil and mix again. Add the chicken pieces to the marinade and massage them well.
Finally add a large egg and massage the chicken pieces again. Marinade for atleast 4 hours

Method of deep frying:

Heat oil in your fying pan/dish and gently place the chicken pieces one by one. Let them fry for 7-8 minutes or until golden brown, on medium-low heat.
Repeat the process for all chicken pieces and keep them aside.

Method of sauteing:
Heat oil in a pan and add mustard seeds and cumin seeds, let them splutter.
Add chopped ginger and garlic and saute until they start turning golden brown.
Add curry leaves and gren chillies and saute for another minute.
Add salt and kashmiri red chilli and mix well.
Add the chicken pieces and saute it for another 2 minutes.
Finally add hot sauce and green shallots and mix well. All set for devouring 🙂
