KETO BUTTER CHICKEN IN AN INSTANT POT & EASY CILANTRO LIME CAULIFLOWER RICE
I have grown quite the collection of easy keto dinner recipes that only take 30 minutes or less to cook and this keto butter chicken using an instant pot is no exception! This is low carb butter chicken recipe is full of flavors from this popular Indian dish and it’s excellent poured over my easy recipe for keto cilantro lime cauliflower rice.
Both the keto butter chicken recipe and cilantro lime cauliflower rice can be made in under 30 minutes. And both are freezer friendly!
If you are making these for your keto dinner tonight, start with the keto butter chicken. Diced chicken is par-cooked in the Instant Pot or pressure cooker for a few minutes. All the other ingredients and Indian spices are added. Then you pressure cook for 8 minutes!
While your keto butter chicken is cooking in the Instant Pot, move over to the low carb cilantro lime cauliflower rice as a side dish. This is made in one skillet and takes just a few minutes to cook. Both will finish at the same time too!

KETO BUTTER CHICKEN FULL RECIPE
3 tablespoons butter or ghee, divided
1 1/2 pounds chicken thighs, cut into 1 inch pieces
1/4 cup diced onion
3 garlic cloves, minced
1 inch ginger root, grated
2 teaspoons ground coriander
2 teaspoons Garam Masala
2 teaspoons turmeric
1 teaspoon salt
1/2 teaspoon paprika
1 cup tomato sauce
1 (13.5oz) can full fat coconut milk
Add 1 tablespoon butter or ghee to the liner of the Instant Pot and hit “saute” function. Add diced chicken and saute for 1 to 2 minutes, just until browned or cooked on the outside. Add onion and cook for 2 to 3 minutes or until softened. Add garlic and ginger. Cook for 20 seconds or until fragrant. Stir in spices, tomato sauce and coconut milk. Secure lid and close pressure value. Pressure cook high for 6 minutes. Once finished cooking, wait a few minutes for the pressure to release naturally before turning or pressing the vent to completely release the pressure. Stir in remaining butter.
KETO CILANTRO LIME CAULIFLOWER RICE RECIPE
4 cups riced cauliflower
1/2 cup chicken bone broth
1 tablespoons butter
3/4 teaspoon salt
1/4 teaspoon pepper
juice and zest of 1 lime
2 tablespoons chopped cilantro
1/4 teaspoon cumin
1/4 cup full fat canned coconut milk, cream part only
Add cauliflower rice and chicken broth to a skillet. Cover and steam over medium high heat for 2-3 minutes or until cauliflower is tender. Pour out excess fluid if desired. Add butter, salt and pepper and saute cauliflower for 1 minute. Reduce heat to low and add lime juice, lime zest, cilantro, cumin and coconut milk. Simmer for 3-5 minutes.
