This recipe is a great option for those following the Keto diet or wanting a simple and healthy meal prep solution. This bento box is quick and easy to make and the flavor combinations will make it your new go-to lunch!
INGREDIENTS:
1 O OrganicsĀ® hard-boiled egg
1 1/2 slices prosciutto
2 Tbs cream cheese
6 asparagus spears, blanched
1/4 cup plain Greek yogurt
1 tsp dill, minced
1/2 tsp lemon zest
1/4 cup yellow cherry tomatoes
1/4 cup celery sticks
1/4 cup broccoli florets
1/2 cup cantaloupe
DIRECTIONS:
1. Slice prosciutto into 3 pieces. Spread with cream cheese and wrap around 3 asparagus spears.
2. In a small container, mix to combine Greek yogurt with dill and lemon zest.
3.. Assemble all ingredients into container/containers. Keep refrigerated until ready to use.
PRO TIPS:
1. Don’t like asparagus? Substitute pickle spears or blanched green beans.
2. For extra flavor, try roasting the asparagus and broccoli before packing into the lunch.
