Keto Almond Butter Cake

Dutch Butter Cake (aka almond butter cake)
(aka Boterkoek) is a dense, cookie-like cake, with the most addictive chewy edges, similar to shortbread that uses LOTS of butter. It should not be taken lightly just because you can stir it together in about 3 minutes, pop it in the oven to bake, and serve it within an hour. It’s truly a unique cake, because it doesn’t rise very high and it comes out moist, sticky, and chewy, like a cookie. Yum! 😋

Pan size: 9-inch glass or ceramic pie pan

INGREDIENTS
½ cup (115g) softened unsalted butter
½ cup (100g) powdered erythritol
1 teaspoon (4mL) almond extract
1 large egg
1 ½ cup (150g) blanched almond flour
½ teaspoon (2g) baking powder
½ teaspoon (2g) salt
2 tablespoons (30g) sliced almonds
egg wash
