Fresh Caught Fried Fish (The Low-Carb Way)

It’s March, and that means spring. I’m headed out to the lake to catch some fish. I have a real hankering for fresh-caught, fried fish today. Come and join me! The recipe and the music attribution are below:

12 ounces of coconut milk
2 TBS of lime juice
1 pound of fish fillets
1 cup of oil for frying
1 cup of bacon powder (a.k.a ground pork rinds)
1 teaspoon of smoked paprika
1 teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon dried thyme
1/4 teaspoon cayenne pepper

In a medium bowl, combine coconut milk and lemon juice. Add fish fillets. Marinate 5 to 10 minutes. Heat oil in large heavy skillet over medium heat.

In a shallow bowl, mix together cornmeal and flour. Season with paprika, black pepper, salt, garlic powder, thyme and cayenne pepper. Dredge fish in cornmeal mixture.

Fry fillets in hot oil until golden brown.
