We’ve been keto for 2 years now and there are foods that we miss. Aside from bread, I miss the crunchy things. You know, like crackers, popcorn, foods like that. On the days that we are not intermittent fasting, I admit, I like to marathon Game of Thrones and have nibbles. Enter this delicious granola recipe. It’s crunchy, as well as sweet and salty, satisfying that craving we all have at some time or another.
We have started adding our macros to our recipes, but on this one it’s impossible. The recipe calls for 2 cups of nuts, and one cup of seeds, its because of this that we cannot calculate macros, as you can have ANY combination of nuts as long as its 2 cups, and ANY combination of seeds, as long as it adds up to 1 cup. I CAN tell you that it adds up to 6 cups. I divided that up into 1/2 cup portions, and put them in snack baggies for travel, or more importantly, portion control! LOL.
Another ingredient that can be added is unsweetened coconut. I would have added this to the recipe had I found it in my cabinet!

Basic recipe:

2 cups any combination of nuts
1 cup any combination of seeds
1/3 c coconut oil
1 egg, beaten
1/3 c Pyure, or sweeter of choice
1/2 c cacao nibs
1/2 Lilly’s chocolate chips (optional, we just like chocolate)
1t of pink salt

Process nuts and seed together until it resembles a very coarse meal. pour the mixture into a large bowl, add the rest of the ingredients except the Lilly’s chips, and mix very well, incorporationg everything very well. Place onto a large cookie sheet lined with parchment paper and bake at 300f for 40 min, or until it turns a golden color. Add the Lilly’s chips, and mix well, allowing the chips to melt just a tad. Let the whole mixture cool and stir it around so it will be crumbly.
I packed mine in 1/2c portions and stored them in snack baggies, ready for my next sweet tooth or snack attack.
