Chicken Florentine Keto Crepe Filling

Chicken Florentine Savory Crepe Filling is a rich, creamy chicken, mushroom and spinach recipe. Perfect for brunch or dinner and made in just 30 minutes. Pair with my Easy 4 Ingredient Keto Crepes to make this a delicious meal! They’re so good, it will be hard to eat just one!

Ingredients
2 Tablespoons Avocado oil
4 Boneless skinless chicken thighs cut into bite size pieces
1/2 Onion, diced
8 Ounces Sliced Baby Bella mushrooms
6 Ounces Package frozen chopped spinach
1/2 Cup Chicken Broth
1 Cup Heavy cream
1/4 teaspoon Xanthan gum
8 Crepes
Salt and pepper to taste

Instructions
Heat the avocado oil in a large skillet over medium heat.
Cook the onions and mushrooms until they’re soft (about 8 minutes).
Add in the chicken thighs and continue to cook until the chicken is cooked through. This should take another 10 minutes.
Add in the spinach and cook until it is completely thawed.
Add in the chicken broth, heavy cream and xantham gum.
Bring to a boil and stir until thickened.
Serve inside your favorite crepe.

For the crepes:
1 1/2 Cups liquid egg whites
6 Tablespoons Coconut flour
4 Tablespoons Cream cheese
1/2 teaspoon Salt

Preheat an 8 inch non-stick skillet over medium heat and spray with cooking spray.
Add all the ingredients to a blender and pulse until all combined. The mixture will be thin.
Add 1/4 cup of the batter to the skillet and swirl it around the pan until it coats the bottom.
Cook for a few minutes until the crepe sets and starts to brown on the bottom.
Carefully flip the crepe with a spatula and cook for a minute more. They should be firm enough to flip. They will tear if you flip them too early.
Remove from the pan to a plate and continue making the other crepes.
Make sure you stir the remaining crepe batter before making each crepe.
The batter will make 8 crepes.
Serve with your favorite sweet or savory filling.
Notes
For a sweet filling, you can add a tablespoon of Lakanto granulated sweetener.
