Marinated Pork –
I am working hard on a new cookbook- my exact measurements will be in the cookbook coming this fall, fingers crossed

Meatza
1 lb sausage ( I used turkey but could use any pork sausages)
italian and garlic seasoning to taste
1/4 cup tomato pizza sauce
toppings and cheese of choice
Spread out sausage in a casserole dish
Bake at 350 till cooked through.
Drain all extra grease and place onto parchment lined baking sheet.
place sauce and toppings and then place under broiler till nice and melty – SERVE and enjoy – reheats well

Ingredients you’ll need:

Shakshuka-
28 oz Can crushed tomatoes
3 tablespoons (42g) butter
1 bell pepper
1 onion
4 cloves garlic
6 eggs
1tsp ground 2g cumin
1 teaspoon 2g sweet paprika
1/2 teaspoon (1g) cayenne
Salt pepper to taste
Optional cilantro for garnish
Whole grain toast for serving

Peanut Pork-
1lb pork cut into 1/2 inch pieces (3.50)
2 (28g) tablespoons neutral-tasting oil
1 bunch green onion, sliced
1 Fresno or serrano chili, finely chopped
4 celery ribs, diced
1/3 cup 55g roasted peanuts
1/4 cup (60ml) soy sauce
2 tablespoons (30ml) rice vinegar
1 teaspoon (6g) sugar
5 cloves garlic
2inch knob ginger
2.5 teaspoons 7g corn starch
Fresh chopped and Cilantro for garnish
steamed rice or cauliflower rice for serving

Glazed Meatballs-
The sauce-
3/4 cup 190g ketchup
2 tablespoons 35g honey
2 tablespoons (30ml) soy sauce
3 tablespoons (45ml) Worcestershire sauce *optional*

For the balls-
1lb ground chicken
3 garlic cloves finely grated
2 green onions
1 small egg
Salt and pepper to taste

For the Veg-
1 bunch kale
4 cloves garlic
1.5 tablespoons extra virgin olive oil
Lemon juice to taste

This video breaks down what me and my wife eat on a weekly basis. This is the type of food I find to be the easiest to meal prep. This will break down everything for you, so if you find yourself to be a beginner this will help you get started. Also when weighing out food and sauces I am not a super picky person ill keep it within 2-3g over or under.

2 large eggs
4 oz cream cheese
¼ cup grated parmesan
1 ¼ cup shredded mozzarella cheese
Italian seasonings
Garlic powder
Onion powder

Alfredo Sauce
2 Tbl butter
MInced garlic
2 oz cream cheese
1 ½ cups heavy cream
½ cup shredded parmesan
salt/pepper
Reserve ¼ cup for bottom of dish

Cheese layer
¼ cup ricotta or cottage cheese
¼ cup shredded or grated parmesan

Meat layer
1 pound ground chicken (or turkey or beef)
Seasonings
1 cup spinach
Alfredo sauce

How to Make and Meal Prep Fathead Pizza (Low-Carb/Keto/Gluten free)

Fathead pizza is something that I eat almost daily (seriously, it’s that good). In this episode, I show you how to make and meal prep this low-carb/keto recipe so that you can eat it 6 times before needing to make more!

INGREDIENTS:
– 6 oz cream cheese
– 510g shredded mozzarella cheese
– 255g almond flour
– 3 eggs
– 1.5 tsp kosher salt
– Whatever toppings you want

DIRECTIONS
– Preheat the oven to 425°F / 220°C
– Crack the eggs, add the salt, and scramble
– Add the eggs to the almond flour and mix
– Melt the cream cheese and the mozzarella cheese in a pan over medium heat or the microwave. If using a pan, constantly stir so that it does not burn. If using the microwave, heat for 30 second intervals, mix, and repeat.
– When the cheese is melted, turn off the heat and mix in the almond flour. Mix until it is well combined. If the cheese gets too stiff, put the pan on low, or microwave for 15 seconds – you want to avoid cooking the eggs.
– Once the dough is well mixed, cut into as many pizzas as you want. Grab a piece and lay it on a piece of parchment paper. Cover the dough with another piece of parchment paper, then shape the dough to your desired shape and thickness.
– Remove the top parchment paper and using a fork, poke the dough liberally to make holes throughout. This prevents the dough from creating a cheese balloon as it bakes.
– Place the dough with the parchment paper onto a baking sheet and into the oven for 12 minutes.
– While you parkbake the dough, prepare your toppings.
– When the timer is up, remove the dough from the oven. Set it on a heat-safe surface or pad and add your toppings (I’m a fan of sour cream, black pepper, and cheese).
– Place the pizza back into the over for another 12 minutes.
– Once the timer is up, remove, and enjoy!
