Pan size: 4 x 4 x 3 inch (10 x 10 x 8 cm) square pan

INGREDIENTS
2 large egg yolks at room temperature
½ teaspoon (3mL) vanilla extract
¼ cup (72g) plain Greek yogurt
2 ½ tablespoons (38mL) heavy whipping cream or coconut milk
2 tablespoons (30mL) coconut oil or any oil of choice
3 tablespoons (21g) coconut flour
¼ teaspoon (1g) baking powder
pinch of salt
2 large egg whites
¼ teaspoon (1g) cream of tartar or ½ teaspoon (3mL) lemon juice
¼ cup (50g) Lakanto monkfruit sweetener or any sweetener of choice
shredded coconut for toppings

-Bake at 300°F (150°C) for 70-80 minutes or until top is golden brown.
-Turn off oven then rest inside for 20 minutes.

**NOTE: For best results, I highly recommend using the metric/gram measurements (using a digital scale), rather than the standard/cup measurements.

If you’re like me, I NEED cake in my life… At birthdays, new years, weddings.. or just for every day eating. I need it! So I went on a quest to find a delicious cake that wasnt shitty. I figured coconut cake was the way to go.

I found a delicious coconut cake recipe on the backside of the Presidents Choice Organics Coconut Flour. Despite in my video, I said I would post the link to the recipe, I CANT SEEM TO FIND IT ONLINE!

So I wil post it.. but please note I did NOT create this recipe. Send all your love to PC Organics.

What you need:

1/2 cup coconut flour
1 tsp baking powder
6 eggs
2/3 cup sugar substitute (I used xylitol)

In a bowl, mix together your coconut flour and baking powder. Set aside.

In another bowl, crack your eggs, and stir in the vanilla and sugar substitute.

Slowly pour your flour into the egg mix while whisking. Do it little by little, mixing in, then pouring more etc.

Whisk until the mixture is not clumpy. Pour into cake pan and bake at 350 for 45 minutes or until you put in a toothpick and it comes out clean.

Top with icing or whatever you want!

Now this recipe was not what I was expecting. I was expecting it to be VERY dense and super heavy… but it wasn’t at all! It was nice and fluffy and VERY delicious. You can even use it for cupcakes or cake pops!

70g almond flour 아몬드가루
140g Greek yogurt 그릭요거트
60g coconut oil 코코넛오일(또는 아보카도오일)
65g swerve 스워브

Bake 300f(140c), 50min~ 1hr

*각각의 오븐이나 에어프라이어 마다 굽는 시간은 조금씩 가감될 수 있습니다
완전히 구워주세요

1. 따뜻한 코코넛오일(전자렌지 약 1분정도)과 아몬드가루 섞기
2. 그릭요거트 섞기(일반 묽은 요거트 아님)
3. 달걀노른자를 1개씩 넣어 섞기
잠시 옆에.
4. 달걀흰자로 머랭만들기
(이때 스워브는 3번에 걸쳐 나누어 넣기)
5. 약간의 머랭을 달걀노른자 믹스물에 넣어 골고루 섞고
6. 다시 그 혼합물을 머랭에 넣어 완전히 섞어주기
(영상의 반죽질기 참고)
7. 20cm브라우니 팬에 유산지를 깔고 반죽을 넣어준 후
뜨거운 물이 담긴 팬에 담아 굽기
8. 섭씨 140도에서 50분 또는 1시간 굽기
(이때 각각의 기계마다 버라이어티한 성격으로 인하여 굽는 시간은 가감될 수 있습니다.)

*올리브오일 향이 괜찮다면 올리브오일 사용도 좋습니다
*완전히 꾸덕한 그릭요거트는 아니여도 묽은 상태는 아닌 요거트를 사용

KETO LEMON RASPBERRY LOAF

I took to instagram to figure out what my next recipe should be and it was pretty clear.. The people wanted to see a keto lemon raspberry bread loaf recipe! and here it is!

This loaf is SO simple to make. It’s very similar to a pound cake. All you really have to do is mix the ingredients together in a bowl, pour into a tin and bake. SIMPLE!

If you want, I recommend adding a tbsp of protein powder (whey isolate is best). That will give it a bit of lift in the baking process however it’s not necessary and can be omitted.

Because the raspberries give of a bit of excess water when cooked, you’ll need to bake it longer than my typical loaves and its imperative that you let it cool before you cut into it!

What you will need:

4 tbsp sour cream
4 tbsp butter (melted)
2 eggs
1 tsp vanilla
1 tsp lemon extract
2 tbsp lemon juice
2 cups (200g) almond flour
1.5 tsp baking powder
1/4 cup (50g) sugar substitute
100g raspberries – halved

In a mixing bowl, whisk together the wet ingredients and sugar substitute.

Pour in the almond flour and spoon in the baking powder. Mix thoroughly.

Finally add in the halved raspberries and stir,

Pour into a loaf tin (I used a 9×5)

Bake at 350°F / 175°C for 45 minutes. Cover with foil after 30 minutes to avoid the top being burned.

Let cool completely before slicing.

This makes approximately 12 slices.
