Oven Roasted Pork Ribeye Roast!
This is the best way to get a moist pork roast!

Ingredients: BRINE:
1 1/2 qt. Water
1/4 cup Kosher Salt
1/4 cup Monkfruit(sugar)
1/2 Tbsp Rosemary, dried
1/2 Tbsp Tarragon, dried
1/2 Tbsp Thyme, dried
2 slices Orange, (optional)
1 tsp Red Pepper Flakes (optional)
2 ea Bay Leaves
1 tsp Herb De Provence
1/2 quart of ice to cool down.
Instructions:
Add all ingredients to a stock pot and bring to
a boil. Reduce heat to a simmer and cook for about
5 minutes. Let cool for about 15 minutes.
Add ice to cool all the way down. In a food safe
bag or container add roast and pour brine over.
Place in the frig. for atleast 4 to 5 hours.

Ingredients: SEARING & ROASTING
3 lbs Pork Roast, (2 roast)
1/2 cup Ornage Pepper
5 Tbsp Ghee
5 Tbsp Grape Seed Oil
(Use you favorite oils for searing)
1 cup Beef Broth
1 cup Chicken Broth
Instructions:
Remove roast from brine and pat dry. Season the
roast all over with the orange pepper. In a
skillet add you oils and bring to a medium
to high heat. About 350F. Once oil is hot
sear off roast on all sides. Place on a rack
inside a casserole dish or roasting pan.
add the broths. Bring to a boil and then
place in a 375F pre-heated oven and cook for
1 hour and 10 minutes or to the internal
temperature you prefer. 1.5 pound roast
with be about 160F at this time & temperature.

1-inch fresh ginger, chopped or 1/2 tsp ground ginger
1 tsp salt
Freshly ground black pepper, to taste
1 cup balsamic Vinegar
1 TB of coconut flour

This video shows how to make the classic French steak sauce; bearnaise sauce. This homemade steak sauce is a rich emulsification of butter with aromatics (shallots, peppercorns, tarragon and chervil). Bearnaise sauce is an herb steak sauce that is a derivative of the French mother sauce – hollandaise sauce (link to hollandaise sauce video : https://youtu.be/b0dngEbvzYs). It is great with steaks and with vegetables.

The bearnaise sauce is a keto friendly sauce.

Ingredients:
– 50ml white wine vinegar
– 50ml white wine
– 20g shallots
– 1 tbsp tarragon (stems if you are using fresh tarragon- however leaves will work)
– 1 tbsp chervil (stems if you are using fresh chervil- however leaves will work)
– 1 pinch of peppercorns crushed
– 4 egg yolks
– 4 tbsp or 50ml water
– 12.5 tbsp or 180g butter clarified

To finish:
– 1 tbsp tarragon leaves
