Brown off the mince then set aside cook Onion and Garlic until Onions are translucent then add Pepper, Celery, and Sugar snaps and cook for 4-5 mins then add all other ingredients including the Mince and cook for 10 mins

BANGKOK, THAILAND: I was very excited to eat at La Maison By Chef Billy, a restaurant in Bangkok where Chef Billy serves Western food – especially French and Italian, and burgers. Additionally, he cooks a massive 5 kilo (11 pounds) supersized burger that you have to order three days in advance. And it feeds 10 – 15 people!
One of the things that stood out to me immediately is that Chef Billy cooks everything from scratch, from his special sauces and seasonings, to the giant bun which he bakes himself. So the quality of the burger and all the food stands out. To make the giant burger, Chef began with a 3 kilo meat patty which was cooked on a hot griddle. Cooking a burger this size is a test in construction and engineering, and it held up to the test!
After all the ingredients were ready, Chef Billy started putting together the burger, layers of lettuce and tomato, Chef’s special sauce, the massive burger layered with 40 pieces of cheese, bacon, then an entire pot of melted cheese sauce, plus onion rings, mayonnaise and more special Chef Billy Sauce.
Again, what stood out to me is the quality of the ingredients and the entire burger. Even though it was huge, it was delicious. The lamb burger was also delicious, juicy and fragrant.
We also tried a few other dishes at La Maison By Chef Billy including duck confit which was extraordinary, pesto pasta with grilled shrimp, and a wagyu steak. Fantastic food, highly recommended!

MEXICAN SKILLET RECIPE 1 tablespoon olive oil 1/2 large red onion, chopped 3 cloves garlic, chopped 1 pound grass fed ground beef 3 tablespoons taco seasoning 2 bell peppers, chopped 4 cups riced cauliflower 3/4 cup corn (fresh or frozen) 1 can fire roasted diced tomatoes 1 cup low sodium chicken broth 1 cup shredded cheese (I like cheddar and jack)
Heat your olive oil in a large non-stick skillet. Once the oil is hot, add in the onions and garlic along with a pinch of salt. Cook for 4-5 minutes or until the onions are translucent and fragrant.
Push the veggies to one side of the pan and add ground beef to the pan and sprinkle in taco seasoning along with a bit more salt and pepper. Break the meat up with a wooden spatula until you have small crumbles (be sure that all of the seasoning is evenly distributed as well).
Once the meat has browned add in riced cauliflower, belle peppers, tomatoes and chicken broth. Season with some more salt and pepper and mix well.
Pop a lid on and simmer for about ten minutes or until your cauliflower and peppers are tender.
Finish by adding in the corn and sprinkling the cheese over the top. Pop on a lid for two more minutes or until the cheese has melted down.
Serve and enjoy!

1 beef heart (approx 3-4 lbs) or 8 ounces as called for in this meal plan this week. 1 teaspoon sea salt 2 cups filtered water
Instant Pot directions: If not cut in half, cut beef heart in half and remove any hard bits (it may already be trimmed and there is nothing to do). Place in the Instant Pot and sprinkle with sea salt. Pour water around the salted beef heart.
Place the lid on the Instant Pot, and set to ‘seal’. Cook on high pressure for 75 minutes on high pressure. Allow pressure to release naturally for at least 15 minutes.
Slow Cooker directions: Follow the above directions as per the Instant Pot, but cook on low for 8-10 hours in the slow cooker instead of using the pressure setting.
To serve, either method: Slice thinly against the grain, salt as desired, and enjoy warm or cool.
