Ingredients:

550 gms Cauli cut into big florets
Oil for deep frying
40 ml oil for cooking
1 tsp cumin seeds
1/2 medium sized red onion – finely chopped
2 tsp freshly chopped ginger
2 tsp freshly chopped garlic
2 Asian green chilies
Some ginger juliennes
Salt to taste
Puree of 1 medium sized tomato
1 tsp turmeric powder
2 tsp Kashmiri Red Chili Powder
1 tsp red chilli powder/flakes
2.5 tsp coriander powder
1/2 tsp mango powder
1/2 tsp garam masala
1/2 tsp cumin powder
Chopped coriander for garnishing

Instructions:

Deep fry cauli florets in oil (on medium heat) until they are golden brown.
Once the cauli florets are golden brown, take them out of the oil.

Heat 40 ml oil in a wok/pan and add cumin seeds.
Once the cumin seeds starts to splutter, add chopped red onion and cook on medium heat until they start turning golden brown.
Add chopped ginger and garlic, and cook for 2 mins or until the raw smell is gone.
Add turmeric powder and kashmiri red chili powder. Mix well and cook for 2 more mins.
Add tomato puree and salt. Mix it well and let the tomato cook on medium heat until they are done (or oil starts to seperate from them).
Add slit green chilies and ginger juliennes and mix well.
Add coriander powder, red chili powder/flakes and mango powder. Mix well.
Add little water and mix well, so that all spices are thoroughly mixed.
Gently add deep fried cauli florets and mix well. Make sure they are coated with spices.
Add garam masala, cumin powder and chopped coriander and mix gently. You are all set 🙂
