30 Minute EASY KETO DINNER RECIPES + KETO MEAL PREP TIPS | Keto Chicken Fried Steak, Meatloaf


For all of my busy moms, dads and keto friends out there, here is a keto meal prep video for you! All of these easy keto dinner recipes can be made in 30 minutes from start to finish AND you can meal prep them too! I have some keto freezer meal options for you and some that can be prepped ahead of time on Sunday to eat later in the week so your family can have a home cooked keto dinner every night and you don’t have to waste time in the kitchen!

In this video, I share three keto dinner recipes that can be made in under 30 minutes plus meal prep tips. I also share with you a low carb dinner menu on how to you can incorporate these keto meals into your week as well as ways to repurpose the recipe if you aren’t a fan of leftovers.

2 T butter
4 cubed steaks
1/2 c almond flour
2 eggs
1 c ground pork rinds
1 t garlic powder
1/4 c heavy whipping cream
1/2 to 1 c chicken broth
1 t arrowroot powder, optional

Season with salt and pepper. Using 3 bowls, add almond flour to one bowl. Whisk eggs with 2 tablespoons water in the second bowl. In the third bowl, combine ground pork rinds with garlic powder. Dip into each bowl. In a large skillet, add 1 T of butter and melt over medium high heat. Add 2-3 cube steaks to the skillet and fry on both sides for 4-5 minutes. Remove. Whisk in heavy cream and chicken broth. Simmer until sauce reduces and thickens. For a thicker gravy, whisk in arrowroot powder.

2 garlic cloves, minced
1/4 c grated onion
1/4 c sugar-free ketchup
1 c ground pork rinds
1/3 c Parmesan cheese
1/2 c heavy cream
2 eggs
1/4 c parsley
2 T Worcestershire
1 1/2 lbs ground beef
1 1/2 lbs ground pork
1 t salt
1/2 tpepper

1/2 c tomato sauce
1/4 c sugar-free ketchup
1 T golden monk fruit
1 T apple cider vinegar
1 t chili powder

In a large bowl, mix together all ingredients for the meatloaf using your hands. Spread meatloaf onto a parchment or foil lined tray. Press down into an even layer. In a small bowl, whisk together the ingredients for the sauce and brush over the top of the meatloaf. Bake in a 375 degree oven for 20 minutes. Finish by broiling on high for 3-4 minutes.

3 T butter, divided
2 c cooked shredded chicken
1 c buffalo sauce, divided
1/2 t lemon juice
1/4 c sour cream
4 oz cream cheese, softened
8 slices deli chicken meat
3 T water
1 c shredded Mexican blend cheese
1/4 c crumbled blue cheese

Add 1 T butter to skillet and melt over medium high heat. Add chicken and 1/2 cup buffalo sauce. Simmer until sauce has thickened.
Remove skillet from heat, stir in lemon juice, sour cream and cream cheese. Melt remaining butter in a bowl. Add remaining buffalo sauce and water. Stir to combine. Pour 1/3 of sauce to the bottom of a dish. Scoop spoonful of mixture to the center of the chicken slice. Roll and place seam side down along the edge of the dish. Repeat. Pour remaining sauce mixture on top of enchiladas. Top with cheese. Bake at 400 degrees for 12 minutes.
