20 MINUTE LOW-CARB FISH TACOS | Keto Tortilla Recipe

I made a version of these a while back but it was with almond flour which I didn’t have in the kitchen this day so I threw together a coconut flour version!

Ingredients:
1. Coconut flour – 1 cup for dough and 1/2 cup for fish coating
2. Psyllium husk – 4 tbsp
3. Butter – 1/2 cup melted (you could use oil for a vegan version)
4. Boiling water – 2 cups
5. Firm white fish – 2 fillets
6. Lemon Pepper – 1 tbsp
7. Zucchini – 1/2 medium
8. Onion, white or red – 1/2 medium
9. Coconut oil – 1 tsp for frying
Servings suggestions: I serve mine with shredded lettuce, avocado, lime mayo and chilli flakes

Instructions:
1. Mix coconut flour and psyllium husk together
2. Melt butter and add to the dry ingredients, stirring until it is the texture of sand
3. Add hot water and stir until it forms a ball kind of like playdough, set aside to cool
4. Dice the onion and zucchini
5. For the fish coating, you could do an egg wash (flour, then egg, then the seasoning) but I found that simply adding the lemon pepper to the coconut flour and tossing the fish in it worked fine. The egg wash would give you more of a firm coating if you had more time.
6. Divide the dough into 6 balls and either roll out into tortilla shapes or flatten it out with a sheet of baking paper and the base of a heavy pot
7. Dry fry (no oil) the tortillas in a hot pan for around 3-5 minute each side or until golden
8. Fry the zucchini, onion and fish with 1 tsp of coconut oil in a medium-high pan until the fish is crispy – around 10 minutes
9. Serve with shredded lettuce, avocado, fresh lime, chilli, feta or any other toppings of your choosing!
