Roast chicken with vegetables

Today I am going to use chicken thighs, you can also use chicken breast. I like to use low carb (above ground) vegetables specially for Keto diet.

Ingredients
🐔1kg Chicken thighs
1 Cauliflower
🍆1 Aubergine
1 Capsicum
🧈Butter
🍋Lemon
🧄4Garlic cloves (finely chopped)
🧄1tsp Garlic paste
🧅 Onions
🧂 Salt
Pepper
Paprika
Dried thyme

Directions
▪️Add 1tsp of garlic paste, dried thyme, paprika, ½ tsp salt & ¼ tsp pepper to the chicken. Then pour our 3tbsp melted butter, 1tsp lemon juice & onions & mix well. Sauté them for 3 minutes each side on the stove. Then cover with foil & place it in preheated oven at 180°C for 50 minutes (for chicken breast at 180°C for 30 minutes). Halfway through turn the chicken.

▪️In another bowl add ½ tsp thyme, pinch of salt, 2 garlic cloves & 2tbsp butter on the aubergine & mix well. Roast them at 180°C for 50 minutes. After 10 minutes turn the aubergine.

▪️In the same bowl add 2 garlic cloves, 1tsp thyme, ¼ tsp salt, 1tsp lemon juice & 1tbsp butter on the capsicum & cauliflower. Mix well then add them to the aubergine for 40 minutes. Halfway through turn the capsicum & the cauliflower.

▪️On a serving dish place the roast chicken & vegetables. Enjoy!
